Happy December and Happy Sunday TKW Family!  So how was your Thanksgiving? Ours was so lovely. It’s just us and honestly, it’s perfect for me. Oh sure I cook for 2 days though on a much, MUCH, smaller scale but I still cook a variety of stuff. I did have a small freak out moment Thanksgiving eve. It was past midnight and I was lying in bed when I had an “Oh crap!” moment! I had totally forgotten about dessert!

Like we’re talking a complete oversight! And we all know Thanksgiving isn’t complete without some type of dessert. So there I was, in bed, freaking out doing a mental rundown on ingredients in my fridge and pantry and what I could make with it. Now normally I make him a 4″ high, 10″ round cheesecake but I honestly wanted nothing to do with that AND thankfully I didn’t have enough time to make it and let it cool properly.

Grocery shopping on Thanksgiving

Have you ever gone grocery shopping on Thanksgiving? I have to admit, I was pretty surprised to see the stores as crowded as they were. I mean folks were actually buying turkeys. I can only assume (and pray) that it was for the weekend and not that day. I ran around, picked up my ingredients and checked out. I felt bad for the workers that had to work on a holiday as I know it but honestly, I was truly appreciative that they were open. It did, however, make me feel good to know they were at least closing early so they could spend the rest of the day/evening with their families.

I opted to make my Chocolate Cream Dream pie but instead of a cookie/graham cracker crust, I went with a pie crust. A simple blind bake for 20 minutes was all I needed. Once cooled, in went the ganache, the chocolate filling, and the piped cheesecake topping. See… he at least got cheesecake in some fashion.
