Mexican Monday, Taco Tuesday or Fiesta Friday, I am HERE for Mexican food pretty much every night of the week.
Truth be told, we didn’t eat a ton of Mexican food growing up in Canada…but then I moved down to the states and pretty much fell in LOVE after I tasted a chipotle burrito bowl and it was ALL Mexican from there on out.
We’ve had Mexican shakshuka, Mexican tuna stuffed zucchini boats and even Mexican zucchini lasagna.
Maybe one day I’ll make you real, normal tacos or enchiladas but until that day, you’re getting a little fiesta-for-your-mouth side dish!
How to make Cauliflower Rice
Are you a lover of stir fries and all the rich, flavorful sauces used in Asian and Indian food? THIS GIRL IS. I love me a bowl of Slow Cooker Thai Peanut Butter Chicken Curry or a heaping bowl of Paleo Easy Gluten Free Healthy Sesame Chicken over a bed of hot rice. You hungry yet? Because I sure am. If this has caught your attention, you need to know about one of my favorite types of rice, none other than cauliflower rice!
Yup, that’s right- you can easily turn a head of cauliflower into delicious rice that your crew will love, and I’m excited for you to try it in this Keto Mexican Cauliflower Rice. There is so much to love about it: it’s versatile, easy to cook, and mild tasting, making it the perfect low carb substitute for traditional rice, pasta, or potatoes! Here’s how to make it:
Wash
Thoroughly wash your head of cauliflower and pat it with a paper towel until it is completely dry.
Cut
Chop your cauliflower up into large chunks. If using a cheese grater, grate the chunks of cauliflower into pieces that resemble rice. If using a food processer, you will want to cut up the cauliflower into smaller pieces and then let the food processer do the work for you on the “grate” setting!
Remove Moisture
Transfer your raw cauliflower rice to a large piece of paper towel or a clean kitchen towel and gently pat and press on it to remove excess moisture. This will keep your Keto Mexican Rice dish from becoming too soggy.
Enjoy
Now you’re ready to either eat your cauliflower rice raw, or cook it!
How to cook Cauliflower Rice
I’ve said it once and I’ll say it again: I LOVE cauliflower rice. It’s such a game changer and is the perfect substitute for rice if you’re wanting a low carb option and to switch things up. You are going to love it in my Mexican Cauli Rice, but first let’s check out 4 different ways to cook it. In the microwave
This is a SUPER simple, fool proof way to cook your cauliflower rice. Simply put the riced cauliflower in a microwave-safe bowl, cover it, and microwave it for approximately 5 minutes. If it’s a bigger bowl you’ll want to take it out after 5 minutes, stir it around, and then microwave it for an additional few minutes.
Steamed in the oven
Similar to microwaving your cauliflower rice, you will want to put it in an oven-safe dish, cover it, and let it cook for about 10-15 minutes, or until nice and tender.
Roasted in the oven
Roasting cauliflower will bring out a nice flavor and a crispy texture, too! Spread out the riced cauliflower on a baking sheet covered in parchment paper and roast at 425 degrees Fahrenheit for 10-15 minutes or until lightly golden brown.
Pan-Fried
Of all the ways to cook cauliflower rice, this has got to be my FAVE. Heat some avocado or olive oil in a frying pan on medium heat until hot. Add the cauliflower rice in a thin layer and stir, cooking for 5-10 minutes or until golden. The key is have a large pan so that you don’t crowd the cauliflower and it cooks evenly.

What to serve with Keto Mexican Cauliflower Rice?
Are you wanting to throw a Mexican Fiesta with family and friends? This rice would be PERF when it comes to low carb mexican side dishes and I think it would be delicious in a taco with a big dollop of guacamole! A couple salads you’ll want to add to the menu to go with it are Mexican corn salad with honey lime shrimp and three bean mexican corn black bean salad.

Keto Mexican Cauliflower Rice
This quick and easy Keto Mexican Cauliflower Rice is only 5 ingredients and will please the whole family! Naturally low carb, paleo and whole30 too!
- 2 Lbs Cauliflower, (cut into florets (about 1 head or about 7-8 cups riced))
- 2 Tbsp Olive oil
- 2 tsp Fajita seasoning*
- 3/4 Cup Salsa, (of choice)
- 1/4-1/2 tsp Salt, (to taste (I like 1/2 tsp but Mr.FFF says that's too much))
- 1/2 Cup Cilantro, (diced)
- Fresh lime juice

Place your cauliflower into a large food processor and pulse until rice like.

Heat the oil up in a large pan on medium high heat. Add in the rice and cook, stirring occasionally, until golden brown. about 5-6 minutes

Add in the fajita seasoning and salt (to taste) and cook one minute.

Add in the salsa and cook until the rice begins to dry up, about 3-4 minutes.

Stir in the cilantro, squeeze on some lime and DEVOUR!
*I use my homemade fajita seasoning recipe (leave the sugar out if you wish) but you could use whatever you want
