For many, being on a gluten-free and/or a dairy-free diet is a medical necessity. More and more people are diagnosed with Celiac disease or gluten intolerance, lactose intolerance, and food sensitivities in general. I was diagnosed with Celiac disease two years ago and at first was devasted by the news, but after going gluten-free and learning to adapt to a new dietary lifestyle, I embraced the change wholeheartedly. Thankfully, there are exceptional cookbooks and blogs to help those living without gluten or dairy create delicious meals – especially ones the whole family will enjoy.
In her new cookbook The Everything Gluten-Free & Dairy-Free Cookbook, author Audrey Roberts (Mama Knows Gluten Free) includes 300 simple and satisfying recipes that are both gluten- and dairy-free. Whether you’re a newbie or are a longtime devotee to the GF/DF way of eating, you’ll find delicious and comforting “free-from” variations to classic dishes such as Eggs Benedict, Chicken and Dumplings (see recipe below), Sausage Gravy and Biscuits, and Easy Thick-Crust Pizza Dough. Roberts walks you through the hows and whys of going gluten-free and dairy-free, including what the consumption of gluten and dairy could be doing to the various systems in your body, what to expect living the GF/DF lifestyle, how to avoid cross-contamination, and what to do when accidentally exposed to gluten (a Celiac’s worst nightmare!).
Recipes cover every meal of the day – breakfast, lunch, dinner – a section on Weekly Meal Plans, as well as chapters devoted to:
Beef and Pork
Sides, Sauces, and Dressings
Pressure Cooker and Slow Cooker
Noteworthy recipes include:

Chicken and Dumplings
"This easy gluten-free Chicken and Dumplings is the perfect wrap-up-in-a-blanket southern comfort dish. The creamy sauce and fluffy dumplings go perfectly with homemade mashed potatoes." ~ Audrey Roberts
4 cups gluten-free chicken broth
4 cups diced cooked skinless chicken breasts
2 cups frozen mixed vegetables
1 tablespoon dried sage
1 tablespoon dried thyme
1 tablespoon onion powder
1⁄2 teaspoon salt
2 cups unsweetened almond milk
6 tablespoons gluten-free cornstarch
2 large eggs
1 1⁄2 cups Bisquick Gluten Free Pancake & Baking Mix
4 tablespoons dairy-free buttery spread, melted
2⁄3 cup unsweetened almond milk
In a large pot, add chicken broth, chicken, vegetables, sage, thyme, onion powder, and salt. Bring to a low boil over medium heat.
In a small bowl, add milk and cornstarch together and stir until cornstarch is dissolved. Pour the milk mixture into the large pot with chicken broth and stir until fully combined. Continue to boil.
In a medium bowl, whisk eggs. Add Bisquick and stir. Add the buttery spread and milk to the Bisquick mixture and stir until fully combined. The batter will be sticky.
Using a greased ice cream scoop, drop dumpling batter into the chicken broth mixture. Reduce the heat to low and cook for 10 minutes. Cover and cook for an additional 15 minutes. Remove from heat and serve.
SAVE TIME AND STILL HAVE CHICKEN AND DUMPLINGS
One of the shortcuts to making chicken and dumplings so easy is using a gluten-free rotisserie chicken. Most grocery stores and even big box stores now have readymade, piping hot fresh rotisserie chickens available. Always remember to make sure that the spices and marinades they use are gluten-free and dairy-free.
