You will only need to buy veggies and fruits based on your weekly menu. Of course, your fridge and pantry staples can be customized based on your family needs. But once you have all these things in your pantry and your fridge, you will always be able to rustle up a spontaneous meal, even on your busiest days. When you commit to keeping this core supply of food on hand, you will even find your weekly shopping easier and faster. This simplified way of cooking will save you some money too, because you won’t be tossing one-off specialty ingredient every time you cleanff out your fridge or pantry. I like to keep our weeknight meals loaded with veggies, low in fat and have a fair amount of nutrients like protein, carbs and vitamins. These noodles can be made using a variety of veggies, making it nourishing and tasty. Adding some vegetarian protein elevates the flavor even more. As we all know, tofu is a complete protein made from compressed soy-milk curds. Tofu is also high in fortified calcium and other key minerals but relatively low in calories, making it a nutrient dense food and a great choice for these flavorful noodles. First step is to boil the noodles as per the instructions on the packet. Strain and keep it aside for now. Heat oil in a wok. Fry chopped garlic, thin slices of Thai red chillies and chopped spring onions on high heat for a minute. Then add chopped mushrooms and torn basil leaves. Cook this for 3-4 minutes or until the mushrooms are cooked. Then add marinated & grilled tofu cubes to the wok along with chopped bell peppers. Continue to saute the veggies and tofu for 2 more minutes. Then add vegetarian Red Thai Curry Sauce to the wok. Mix it and after frying for a minute, add the cooked noodles to the wok. Lightly toss it all together. Check the seasoning and add salt and pepper as per your taste. You don’t need to over cook it, just lightly toss it and take it off the flame. Make and serve these Asian Style Thai Basil Tofu Stir Fry Noodles on a weeknight or on a weekend brunch! It’s super delicious.

- 2 packets noodles (400 gms)
- 2 tbsp cooking oil
- 8-10 cloves garlic
- 2 Thai red chillies
- 1 cup chopped spring onions
- 2 cups chopped mushrooms
- 0.75 oz basil leaves
- 100 gms tofu cubes
- 1 bell pepper
- 2-3 tbsp Thai Red curry paste
- salt to taste
- pepper to taste

First step is to boil the noodles as per the instructions on the packet. Strain and keep it aside for now.

Heat oil in a wok. Fry chopped garlic, thin slices of Thai red chillies and chopped spring onions on high heat for a minute.

Then add marinated & grilled tofu cubes to the wok along with chopped bell peppers. Continue to saute the veggies and tofu for 2 more minutes.

Mix it and after frying for a minute, add the cooked noodles to the wok. Lightly toss it all together.

Check the seasoning and add salt and pepper as per your taste. You don't need to over cook it, just lightly toss it and take it off the flame.

Make and serve these Asian Style Thai Basil Tofu Stir Fry Noodles on a weeknight or on a weekend brunch! It's super delicious.
To prepare the tofu – Cut tofu in cubes and transfer them to a bowl. Add cornflour, paprika, salt, dried herbs and marinate for 30 minutes. Then shallow fry or grill them.
You can add tofu cubes without marinating it as well.
Feel free to add any veggies you like in this recipe.
